Over on The Price Hike blog, Bloomberg critic Ryan Sutton notices the rare price drop: the seven-course market menu at Ciano, Shea Gallante's well-reviewed new Italian restaurant, is now $115, down $20 from the previous $135. Gallante explains that in the past, the tasting menus often used more premium proteins and exotic ingredients, like truffles. He also notes:
Like everyone else in the industry, we have had to deal with increasing operational costs — food and labor — and have tried to absorb as much as we can....I have always tried to offer value and an experience based on the quality of the ingredients that are used to create the menu.The restaurant no longer serves the four-course and five-course menus that they were running earlier this year. Elsewhere in the Price Hike universe, the tasting menu at The Modern is now $155, up from $140, but it includes an additional savory course and dessert trio.
