Pop-Up Team Opening CO-OP Food & Drink in Thor Space

Last month we learned that some changes were afoot at The Hotel on Rivington, and now Flo Fab reports that the restaurant space that was Thor will reopen as CO-OP Food & Drink, an American Brasserie serving shareable plates, sushi and raw bar items. It's being run by Alan Philips and Jason Apfelbaum, the duo behind dining event company Guerrilla Culinary Brigade — they're the ones that did that pop-up with Greg Grossman.

They've enlisted Nobu and Le Bernardin alum John Keller as the executive chef, and Stephen Wong, a Sushi of Gari vet, to handle the fish for the new project. The CO-OP team tells Eater that Julio Torres, who worked at Balthazar, Babbo and the BLT group, will design the cocktail program, and that the wine list will feature only American selections.

As was previously mentioned, Philips and Apfelbaum are also going to do a few other smaller projects inside the hotel, including a taco and tequila bar in the old CV space, a sake and sushi spot in another area, and they may even do pop-up dinners on the roof. CO-OP opens for dinner on May 19.
