Behold The Dutch's Late-Night Only Cheddar Burger

Last night, chefs (Paul Liebrandt, Josh Capon, the Franks, etc.), media folks (Kate Krader in the hizzy), friends of the house, and impatient restaurant obsessives descended on The Dutch, Andrew Carmellini's new Soho restaurant, at 11 PM for its first public night of late-night only service. They kept the more formal back room—painted red and lined with dark leather banquettes—off limits to guests but say they hope to serve dinner back there by the end of the week. Late night service will do down, as it did last night, in the front two rooms (see more here).

Of course, this being Burger Week, the most vital issue at hand was that of the burger. And here it is: a 7 oz beef patty (La Frieda tells us Carms asked for a super straightforward, nothing fancy blend), with cheddar, lettuce, tomato, and a slathering of special sauce, served on an Orwasher bun, alongside a pile of fries in a metal tin.
