Yesterday, we got a peek at the new location of the Momofuku Milk Bar, right across the street from the old one. We also learned that David Chang was leaving the future of the old space up to his boys in the kitchen at Ssam Bar, who are riding high from their inclusion on the World's 50 Best Restaurants list. Now, The Robs find out exactly what they're going to use the space for: more seating, and a big time duck-centric lunch operation.
They're adding a full bar and some stools to the space, which will now officially be just another part of the Ssam Bar. But they've also installed a Rotisol rotisserie, which they will use to cook a lot of Long Island ducks. Starting May 2, lunch service Monday-Friday will be entirely based around duck dishes, including things like duck over rice, duck soup, and perhaps even an “old-school” duck ssäm. The old lunch prix fixe is going to be swapped out for a chalkboard menu, and guests will now pick up their food at the counter, kind of like when the restaurant first opened back in 2006. The evening and weekend menus are staying the same.
