Gabrielle Hamilton, Jonathan Waxman on Charlie Rose

On Friday night Charlie Rose devoted an entire hour of his show to chefs and invited Prune's Gabrielle Hamilton and Barbuto's Jonathan Waxman to the table (along with Ferran Adria). Gabrielle Hamilton, in her 30 minute interview, spoke about the "elusive and vicious myth" of balance in a female chef's life and about who in New York is cooking the best Italian food— Mario Batali, Michael White, Mark Ladner. Then Jonathan Waxman compared writing a cookbook to "eating a pound of sand" and spoke about the dangers of young chefs looking to get too famous to quickly.
