Chris Goossen, the chef at Murray Hill's Teqa, claims that he doesn't cook fusion cuisine, even though he serves chicken Teriyaki tacos: "Everybody else will sit there and make a kung pao chicken and they’re going to put a Mexican tomatillo salsa on it and then put that into a taco. That doesn’t make sense to me. What I do is develop dishes in my 20 years of experience that are mini appetizers. I adapt those for a tortilla." [Food Republic]
