Earlier this week, news broke that Le Cirque chef Craig Hopson is leaving the restaurant soon. He initially mentioned plans to open a place of his own, but now the Post reports that Hopson is actually headed to another project that's been in the works for some time: The Brewster, the Soho restaurant from Rose Bar vet Frank Roberts and developer Ross Morgan.
At a community board meeting last year, the team pitched The Brewster as a saloon with an underground oyster bar, but now the concept has changed to a "restaurant and Eataly-type market" serving American food. Hopson notes: "French cooking is what I do, but if I’m not cooking foie gras and truffles, so be it....There’s plenty of other stuff on the table.” The Brewster is slated to open in the spring.
