2011_10_smorgas.jpgAfter a year and $1.5 million in investment, the people behind Manhattan mini chain Smorgas Chef now have an operational farm in the Catskills to supply their four restaurants with 400 pounds of produce a month. Says the owner, "We absolutely feel that it's our responsibility to find out how we can shore up a derailed food system...Beyond that, it's good for you, it's good business, and it makes sense."
