Flo Fab reveals that the longtime Le Bernardin pastry chef will leave the restaurant on January 1 to "pursue other ventures." He's not looking for a restaurant job and instead will focus his attentions on writing a book about "kitchen life from the point of view of the pastry" and also on mentoring and teaching.
And with that, one of the best and most high profile pastry positions in the country is now open. Chef and owner Eric Ripert says he looking for someone with a strong pastry background who can also "handle some of the techniques of molecular gastronomy" (as Laiskonis could). Time for you pastry peddlers to update those resumes.
