In just a few days, David Chang will open Seiobo, the new Momofuku restaurant at the Star City Casino in Sydney, Australia. The reservation site is now live, and it looks like they're going to serve a daily tasting menu, like at Momofuku Ko. The cost is AUD $175 (about USD $180), which, as Ryan Sutton points out, is more expensive than Ko. After announcing that they were taking reservations, Chang tweeted: "want to be around Sydney a very long time. we promise to find way for cheaper alternatives (hint)."
According to the site, the menu is "inspired by the bounty of Australian ingredients and Sydney’s diverse food culture." No word yet on how many courses will be served, but they ask that guests allow at least two hours for dinner. The kitchen includes chefs who worked in the other Momofuku restaurants, as well as Noma in Copenhagen, Quay in Sydney, and Jean Georges in NYC.
