Former restaurant critic Sam Sifton has filed one final piece for the New York Times Dining Section—a critic's notebook roundup—after his Per Se sendoff last week, but today he officially starts his first day running the show at the National Desk. The paper has yet to announce either an interim or full time critic, putting many a restaurateur on edge for the month.
