Welcome back to Sound Bites, an Eater original video feature in which footage of the city's most badass chefs crafting their signature dishes is paired with tunes from up-and-coming musicians. Regarding the volume: turn it up.
This week on Sound Bites, Victoriano Lopez, the chef de cuisine at Gastón Acurio's splashy new Peruvian restaurant in the old Tabla space, La Mar Cebicheria, demonstrates two classic Peruvian dishes: a ceviche and a grilled steak. The ceviche, called "Elegance" on the menu, features warm water fluke, red onions, Peruvian corn and yam in leche de tigre, the classic ceviche marinade made of five elements. The meat is a lomo saltado, which is wok sautéed hangar steak with onions, tomatoes, scallions, fried quail egg and organic french fries with a side of arroz con choclo.
Providing the jams today is the band Toothache with their song "Skin."
