Daniel Boulud tells The Feast that he often tests he chefs by having them make him an impromptu lunch. He'll ask for a pasta, a salad, anything as long as it's not his own food. So far he's only been disappointed: "I've got nothing to rave about yet...They know how to do what we teach them to do, they still don't know how to fly on the their own." [The Feast]
