Last week, David Chang was in Lapland, Finland for the Cook it Raw event, wherein he and some of the world’s best chefs — including Noma’s René Redzepi and Daniel Patterson of SF’s Coi — were asked to make a meal using raw ingredients plucked straight from the forest floor. Thankfully, the foraging was caught on video by travel site RedVisitor — in the clip below, we see the Momofuku chef picking up a bunch of wild lichens, and explain that he’s “going to smoke the oil and try white fish or char with reindeer milk.”
