A few more details are starting to trickle out about one of the more promising food truck openings of the fall, Korilla BBQ. The new truck — which boasts a Morimoto vet in the kitchen — is building a staff, firing up the Twitter page, nailing down their hours, and finishing up recipe development. Food porn posted to their Facebook page shows tacos and burritos stuffed with pork loin and belly, rice and bibb lettuce, plus a few more interesting riffs on Korean BBQ, like a bulgogi sandwich on Amy’s bread and truffled rice with bacon and kimchi. All signs point to an early October street date, with lunch service seven days a week, and late night hours Thursday-Saturday, location unknown.
Naturally, it's too early to make any comparisons to Southern California phenomenon Kogi, but as we know, the Korean taco trend is on the rise, the new truck's food looks great in the test-run pics, and lord knows New York has been thirsting for bona fide Asian BBQ/taqueria mashup on wheels. Also? Among the requirements for working in the Korilla truck: “you must love making cash money and be a card-holding member of CREAM.”
