When big time chef Fabio Trabocchi departed the Four Seasons just three months into his tenure, the restaurant world wondered where the chef would go next. He and his wife both hinted at moving to Washington D.C., but Flo Fab reports today that they are staying put. He is taking on a gig as a consulting corporate chef, at Villa Pacri, the three story multi-purpose restaurant/cafe/retail/lounge in the old Merkato 55 space. The cafe and retail portion of the space opened last month and the formal upstairs dining room is now scheduled to debut in September.
Of course this would be bigger news if Trabocchi were actually the one behind the stoves every night, and if his contract was longer than four months. He'll leave at the end of the year after developing the restaurant's "Italian-accented" menu.
