In an interview with Eater National, San Francisco superstar chef Traci Des Jardins notes that the East Coast has always been a few steps behind the West in terms of sustainable and local cooking. And an NYC expansion isn't out of the question: "I contemplate Mijita here. I think there is a dearth of good Mexican food here. And California has a saturation of Mexican food.
