Nation's Restaurant News reports that Philippe Bertineau has been named head chef at Keith McNally's Balthazar. He was previously at Payard and before that, Daniel. Riad Nasr and Lee Hanson remain the corporate chefs for McNally’s restaurants. [NRN]
