According to a study by the Center for Disease Control, salsa and guacamole "were blamed for one in 25 identified outbreaks of food poisoning at restaurants between 1998 and 2008." Why? The ingredients aren't cooked, the finished product often isn't refrigerated, and they are made in large batches, so a bad ingredient has the chance to reach far more people. [WSJ]
