To be frank, the big surprise with At Vermilion, the massive, poorly performing Midtown Latin-Indian restaurant that opened in the throes of the recession, is that it is still open. Just months after its debut, the Times pretty much predicted its demise. And the restaurant appeared recently in a Crain's piece as an unlikely survivor of lean times. How owner Rohini Dey made it work: slashing food costs, hosting more events, renegotiating her lease, and, by the looks of the signage above right outside the restaurant, skimping on exterior upkeep.
