Fork in the Road runs an excellent interview with Fernando Ruiz, the co-owner of the exceedingly popular Tortilleria Nixtamal in Corona Queens. It's the only place in New York to make fresh masa dough, which they serve in tacos and sell wholesale to some of the city's best Mexican restaurants.
In the interview, Ruiz reveals he's working with the people at Cafe Spice on a new Mexican line for Whole Foods. More importantly, he's teaming up with the folks behind the Senor Tacombi—a taco truck that will be parked indoors on Elizabeth Street: "...he's going to give me part of his restaurant, so that I can open a tortilleria within the restaurant...it's going to be set up like a street in Mexico, with the taco truck parked inside the space, and tables set up like you were on the street...And I'll set up my tortilla machine." Fun.
