Larry Forgione Joins Expanding P.J. Clarke's Team

After being installed as "supervising executive chef" at Graydon Carter's Monkey Bar, Larry Forgione has now accepted a the position of culinary director with P.J. Clarke's. Why does a place known for its burgers need the "godfather of American cuisine"? The company is expanding nation-wide (not including the one in Brazil) and has plans for a line of Shake Shack-esque stands, and Forgione will ensure quality control and a menu that emphasizes local ingredients. Case in point: Instead of your standard cheese selections, the existing locations have added a selection of Hudson Valley cheeses for its famous burgers. Plain old American was always good enough for us.
