Today on Hamptons restaurant owner Bruce Buschel's NYT column, he reflects on the business after having been open for three months. Asked if he likes being an owner, he responded, "What do I really own? Debt, responsibilities, some wine and a full-fledged obsession. I miss my wife and my life; any semblance of a proper balance is still beyond my reach. On the plus side, I am becoming more human. I have more transactions with more people in a single week than I used to have in a year." [NYT via Eater National]
