Today marks the debut of Ai Fiori, chef Michael White's second big opening of the fall and his first recent project without his usual partner in crime Chris Cannon. Clocking in at 185 seats, the restaurant occupies the second floor of the new Setai hotel on 5th Avenue and 37th Street, and it is the chef's first foray outside of the Italian realm. Here the focus is the French Riveria with menu items including sweetbreads with dates and Madeira and seared Wagyu with Bordelaise along with White's signature pastas (here gnocchi with sage and porcini ravioli). White has pulled together a crack team of industry vets to run the show from some of the city's best restaurants, a move he was recently criticized for by Drew Nieporent. Chris Jaeckle (a Morimoto and Eleven Madison Park alum) runs the kitchen along with pastry maven Robert Truitt (recently of Nieporent's Corton). Eben Freeman runs the bar, Jean Georges' Hristo Zisovski has control of the wine list, and GM Alfredo Ruiz (Del Posto, Babbo) mans the front of the house.
