In an interview with Paper, Danny Meyer talks about the opening of Union Square Cafe 25 years ago, the mafia's attempts to intimidate him, why he used to hire only non-New Yorkers, the closing of Tabla, and the neighborhood back then: "There was a methadone clinic two doors down.
