As the countdown to the opening of the John Dory Oyster Bar in the Ace Hotel continues (exactly one week to go), new details emerge on the restaurant, a remake of the original edition that closed last summer. Flo Fab reports today that the space is done in shiny black tiles and is, not surprisingly, covered in aquatic tchochkes. It seats 100 all on backed stools, and there is a 12 seat chef's table.
More important is the menu. This time around, chef April Bloomfied is offering a pared down menu which features raw items—clams, oysters, sea urchin in its shell, scallops, fluke, etc.— caviar service, cold plates like smoked haddock terrine ($11) or burrata with trout roe ($20), bar snacks including eel and parsley pie ($11) and shrimp and potato torte ($14), and hot plates like her famous oyster pan roast ($19), manilla clams with bone marrow ($16), and stuffed mussels with veal and mortadella.
