The Feast runs a two part interview with Tabla chef Floyd Cardoz on the closing of his 12 year-old restaurant. Cardoz explains they'll reopen the Tabla/Bread bar concept in a smaller space in New York and perhaps eventually in other countries. He ads, "I think a three hundred seat fine-dining Indian restaurant will never work. I think the right number is around 70 or 80 seats. You want the restaurant filled every night; you want it to be a party." [The Feast]
