Today the Times gets a sneak peek at Scott Conant's new restaurant going into the failed Table 8 space at the Cooper Square Hotel. What they learn: It will be called Faustina; friends and family dinners start on Friday, and it opens to the public on February 5; much of the Table 8 staff remains; the "airier" space features banquettes made of gray Naugahyde. Some of the dishes sampled at a waiters' tasting included "olive-oil-poached sardines, veal porterhouse steaks and tajarin pasta with tomato and sea urchin (which Mr. Conant described as 'sex in a bowl')."
