Last night, among some impressively coiffed old dames and elderly gentlemen pushing their way to the bar, chefs George Mendes, Nate Appleman, Gavin Kaysen, and the dudes from Animal in LA served up snacks for a Citymeals benefit at Daniel Boulud's Bar Pleiades. Appleman came up with his dish, smoked sablefish with capers, dill, and bottarga di Muggino, on a whim, but liked it so much that he's adding it to the Pulino's menu. [EaterWire]
