The Cuozz takes back his recessionary doomsday prophesies of early '09, declaring the restaurant industry in the clear. Not only are the closings less dramatic than expected, but chefs are forced to take the focus off private dining: "...full dining rooms don't tell how much customers are spending -- much less, owners whine...But the energy level...seems undimmed...I've never seen as many well-known chefs in their restaurants as I have this summer."
