The Robs run a little fall preview Q&A with Tien Ho, the chef at Momofuku's new midtown concept in the Chambers Hotel. Highlights include Ho's reaction when Chang told him he chose a space in midtown—“No way, man, you gotta be kidding me...Fuck you, dude. I’m not going back to midtown”—and some new revelations about the setup and the menu—there will be no counter seating, but yes, there will be pork buns. They're conceptualizing entrees in the low to mid $20 range, a prix fixe lunch, and French staples like pâtés, terrines, roast fish, and grilled meats with a Vietnamese edge.
One important note: Ho is working with DeBragga on a burger, but it will not be served in the dining room. Room service only for that puppy.
