This weekend, Guest of a Guest ran a lengthy email interview with quirky bar owner/reality star/fashion designer/LES personality Matt Levine, the man in charge of The Eldridge on the LES, the newly opened Georgica on East Hampton, and the soon to open Hell Square monster LevantEast in THOR. To fully celebrate the wonder that is Levine and his philosophy, our favorite quotes, presented without comment:

— "Georgica is bringing back an older crowd, great conversation, amazing cocktails, the countries best DJ’s, and no bottle minimums- just table reservations - that is Georgica."

— "In the spirit of 'mixing it up', LEVANTeast...and Georgica will utilize up and coming mixologist, Jamie Gordon. His creativity and use of fresh fruit is amazing – perfect seasonal feel."
