NYMag spends a few hours with Totonno's owner Louise Ciminieri as the restaurant prepares for its reopening. The exact opening date is still up in the air, but rest assured Louise isn't changing a thing: "She may live on Staten Island, but this is her home, and every pie (no slices!) is a communion with the past, her family’s and the city’s. “My grandparents washed their hands in that sink!” Louise says, appalled at the suggestion she could have taken the opportunity to redesign for efficiency. “Why wouldn’t I want everything to be the same?” [NYM]
