Per our sworn duty, for the next three days we'll be bringing you regular photo and video dispatches from FergusStock, the annual Spotted Pig tradition, extended to The Breslin this year, of welcoming and showcasing offal acrobat Fergus Henderson to New York. To kick things off, tonight he cooks at the Pig, adding six dishes to the regular menu (see menu, last slide). The pigs head pie (slide three) will be the main event. These images are as of 5:30PM, when Chef Fergus talked through each of his dishes with staff and gave a few notes to his sous, April Bloomfield, on plating and such.
