Eater Inside: Prime Meats

Carroll Gardens: Yesterday, the Robs gave us a little preview of Prime Meats, the new restaurant from the owners of Frankies Spuntino in Carroll Gardens and the LES and the soon to open Delightful Coffee Shop in Red Hook. But let's take a look around shall we?

The restaurant, which is connected to 457 through its backyard, will be composed of a tap room (above), a dining room, and a small retail booth around the corner. The dining room and storefront, still under construction now, should be ready to go in the next month, around the same time when the Franks expect to have the menu perfected, the large kitchen fully operational. The tap room is now open on the weekends and can be accessed for the time being through Frankies 457 (cocktail menu below).

As usual with a Frankies operation, the place is a stunner, and every component is meticulously sourced from the wide plank solid oak floors to the 1890's bar, the 1870's chandelier, antique punch bowls, and the hand painted wall paper. The seating in the back of the tap room looks as if it came from an old schoolhouse. The dining room space next store is almost a mirror image of the tap room (as far as size goes) minus the bar, and it will be ringed by plush red banquettes.

The focus for the menu is, what else these days, local and simple. Everything will be sourced from local farms from the meats to dairy to vegetables, and they plan on breaking down bulk meat to be used in their three restaurants, the soon to open cafe, and their storefront. Their big goal here: to create a restaurant reminiscent of those that existed before the industrial revolution, "like the food you could have ordered at a restaurant a century and a half ago."

As for the bar, the Franks and managing partner Travis Kauffman have made a number of home-made bitters for their cocktail list while Sixpoint has created a special house brew for one of their taps (their others will pour local and international beer). The storefront will act as mini-butcher, retail space, and takeout area, where they will sell meats from the restaurant along with olive oil, olives, coffee, and various other items.
