Here's an unusual discovery: the owner of two trendy Williamsburg bars, Royal Oak and Sweet Up's, is in the National Guard and thinks of serving in the military as paying off the debt on his "social-contract credit card." More importantly, he's opening an LES restaurant with a military loan: "...he plans to open Hotel Chantelle, a two-floor restaurant he says will look like 'what a tasteful Chinese businessman living in Paris would have built in the 1910s, but then aged to 1940.'"
