Restaurants & Institutions has released its annual list of the 100 highest-grossing independent restaurants in the country. As usual the list is dominated by New York and Vegas. We have 32 restaurants on the list but the following rank in the top fifteen: Tavern on the Green ($37.6 million/year), Smith & Wollensky ($28.7 million/year), Tao ($26.8 million/year), Buddakan ($20 million/year), and ‘21’ Club ($19.8 million/year).
