As usual, the Bruni is shaking things up in the restaurant world. Yesterday Frank wrote that certain restaurants, including LES staple Freemans, should allow diners to order small plates willy-nilly instead of making them order the entire meal all at once. And what do you know? Freeman's had already changed its policy. Per an email from owner William Tigertt to the Frank: "'It was a holdover from our old kitchen setup,' he wrote, recalling how tiny and limited that kitchen was, and how quickly it could be overwhelmed if orders weren’t submitted to it in a coherent fashion. After the kitchen was upgraded, he said, the policy went away." [Diner's Journal]
