WEST VILLAGE—The space next to his celeb-swarmed flagship that papa Silvano has operated as Da Silvano Cantinetta since 2002 will become Da Silvano Bistecca next week—starting on Monday, 12/22, if the current debut schedule holds. In a sea of restaurant concepts that won't work in 2009, this one might: it's comfort food at soft prices, from a guy who already has a following. Leyla Marchetto, Silvano's daughter and the champion of their up coming restaurant across the street, Scuderia (opening Jan/Feb-ish), tells us that they've swapped out the neutral colors of the Cantinetta for more steak-appropriate reds throughout.
