Flo Fab reports that Craig Hopson, the chef at One if By Land, Two if By Sea for just over a year, will be installed the new head chef at Le Cirque, replacing Christophe Bellanca and beating out a number of the city's top candidates (including one Franklin Becker):
"'His style of food will fit in here,' Mr. Maccioni said. 'He can do classic dishes even though he is young. It’s very important for this restaurant. We will gradually add his dishes to the menu.' Mr. Maccioni also stressed that Mr. Hopson 'gets along with everybody, respects them.'"Prior to One if By Land, Hopson worked for four years at Picholine, earning the restaurant three stars from the Brunmeister.
