Eater San Francisco got a chance to grill Michelin Guide director Jean-Luc Naret yesterday. We discover inspectors wait two months before reviewing a new restaurant, visit each place three to four times, and 75-80% of the reviewers people buying the guide are local. Also, how to lose a star: "Well there's always a good reason to lose a star and yes, several restaurants lost stars this year...Maybe a restaurant will lose a star because of a closure but we don't take away stars based on rumors or anything like that."
