PLYMANIA Hangover Redux: Hill Country

The fallout from last Friday's PLYMANIA blowout continues to swamp the Eater inbox...

Above, please let your eyes linger on what is soon to be one of the go-tos for BBQ fans in New York City. This is Hill Country, Marc Glosserman's shrine to all things pit-cooked, a massive venue coming to West 26th Street that will feature live music as well. Opening was pushed back from winter til what they're calling "early June"—which, per these pictures, will require hustle. But given the Big Apple BBQ on the weekend of June 9 (where Hill Country will be participating), we hear they're hoping to time the opening to that window.

Either way, the excitement is building. Here's one email to Eater: "Since I am a Texan and lover of all things TX, I'm very excited about Hill Country opening up. This is a description that was posted on my alumni chapters webpage looking for fellow Texans to join the Hill Country staff."

TEXANS, SOUTHERNERS, LOVERS OF BARBECUE & AUSTIN MUSIC WELCOME!!!

Hill Country - an innovative, laid back and fun new restaurant concept celebrating the rich tradition of Central Texas Barbecue, and the music of Austin, which is set to open in Flatiron/Chelsea very soon is looking for the positions listed below.

Hill Country is a high energy, high volume, 250+ seat, bi-level, 11,000 sf barbecue market and live music venue. There will be a state champion pitmaster on site in charge of meat production. The menu of gourmet spins on traditional side dishes and desserts has been created by a renowned barbecue expert. Senior management are highly trained restaurant professionals who hail from some of the most prestigious restaurant groups in the city.

There are two bars - one on each floor. We will specialize in long neck beers, bourbon and tequila, a unique Texas-focused specialty cocktail list, and will be offering NY's first-ever, all-Texas wine list. There are two large dining rooms where cocktails will be served, and a sidewalk cafe. There will be live music celebrating the Austin scene on the lower level, which has 150+ seats.
