CHELSEA—Gregory Hockenberry's post-Bruni, entirely unenviable task of having to hunker down and cut costs at his one-starred Varietial may have just gotten a tad easier. Though as of this moment Hockenberry says, "there are no changes at Varietal," Eater has learned that the restaurant's pastry chef -- and, save for from Bruni, the guy in the house that's gotten the lion's share of the praise -- is set to resign today or tomorrow.
