EAST VILLAGE—From unnamed sources familiar with progress at the Cooper Square Hotel, while their talk of bars as far as the eye can see is really going to leave a mark on their neighbors, residents may be be a bit more pleased with their choice of chef to run the restaurant(s): Govind Armstrong, Los Angeles chef and heartthrob of Table 8 fame. If and when the hotel opens sometime in the middle of next year, we're hearing he's going to be the guy. In other Cooper Square news, in anticipation of a serious neighborhood protest tonight, Peck/Moss, the hotel's developer, has just withdrawn their liquor license application from the agenda of tonight's Community Board 3 meeting.
