Pull-quote: "It is a fact that the health department decided to "close down the big boys for the holidays" (not that Bubby’s is one of the big boys, but this is a direct quote from an inspector who was sent to watch us to make sure we wouldn't open while we were under closure). So they have enough inspectors to watch out, but not enough to reinspect. We are to code and ready to open, but we have to wait for the city to come back to work on Monday and have a real inspector come out – not just this babysitter dude who’s sitting outside my restaurant making sure we’re not cooking and selling food."
