Dave Chang, everyone's favorite East Village mad culinary genius, is at it again. As we usher in the New Year, Dave brings us an extensively overhauled menu at Momofuku Ssäm Bar, and it's now available throughout dinner service, from 6 PM to 2 AM. Though this new menu is a very significant departure from what Chang initially had conceived of as the model for Ssäm (recall: ssäm only until 10:30), it is perhaps where he should have started all along. Bo Ssäm remains the showpiece, however no dish on this new menu is a blind spot, from the squid salad to the completely unassuming but delicious fried cauliflower romanensco to the new 'Stews', which are each a bit of clay potted bliss. With this menu overhaul, Chang has, simply, nailed it. Ssäm 2.0 may very well be the best dining experience in NY right now. By April, there will be a two hour wait at 8 PM. Fact.
