Ssäm Bar Late Night: Pork, Mochi, Bubbly & Dr. Pepper

Fresh off the phone with one David Chang, we now have the full story on what's happening at Ssäm Bar after the main kitchen shuts down at 10 PM. Turns out that Chang has assembled a first rate group of chefs to oversee his late night kitchen, which will have raw bar, small plates (including, steady folks, the pork buns), pork as far as the eye can see and, in a genius move, a mochi tray for dessert. The menu is a collaboration between Quino Baca (Momofuku), Tien Ho (former Cafe Boulud sous-chef), and Josh McFadden (former Lupa sous-chef). Cory Lane (former Nobu 57 beverage director) is managing the place and taking care of the booze, which is -- trend alert -- quite heavy on anything that sparkles. As DC tells it, "Having all of these talented guys who all happen to be friends was the main reason why we opened late night, plus we needed something to do as people figure out what the hell Ssäm is about."

As of now late night at Ssäm runs from 10:30 PM to 2:30 AM and is open to the public.
