Just finished reading the post re: BLT managers being underpaid. I went to the clam shacky-type place at BLT fish a little under a year ago. Early March. The sun was out, but it was about 49 degrees outside. The place had that huge streetside window wide open. Wind was blowing napkins off the table and everyone in there was wearing their winter coats at their tables. We called one of the underpaid managers over and asked him to close the window. "No problem," he said. Fifteen minutes later, window still wide open; we called him over again. We asked him why he hadn't closed the window. "The chef likes to keep it open," he said, "it gives the restaurant a summery feel." We cancelled our entrees and got the hell out of there. Apparently either Laurent Tourondel is slap out of his mind or those underpaid managers are willing to lie about his climate preferences because they are too damn lazy to close the windows.
