hey
did anyone ever write in to tell you that the waiters at the BLT restaurants are required to tip out their managers?
i used to work there and was disheartened and frustrated by this. A multi-million dollar restaurant empire that couldn't (or rather, wouldn't) pay their managers more than $12/hour and made up for it by designating them a cut of the waiters (and runners and bussers) tips.
If you'd like more info, please be in touch. I know it happens in a lot of restaurants and insecure employees are bullied into keeping quiet for fear of losing their jobs, but I think patrons should know where their added 15-20% is really going.
