As Joshua Smookler prepares to open the permanent outpost of his hit ramen pop-up Mu Ramen, he chats with Joe DiStefano about the menu, and some of his inspirations. Besides several classic ramens, he'll serve one special ramen every week, which could be flavored with anything from foie gras to yuzu. He also plans an okonomiyaki dish topped with foie maple syrup, and now hopes to open by mid to late October. [C+M]
